| Black Eyed Pea's Broccoli-Cheese Soup 1 1/2 lbs. fresh broccoli,chopped
2 cups water
3/4 tsp salt (I only use 1/2 tsp)
1/2 cup cornstarch mixed with 1 cup cold water
1 pint half and half
1 pound velveeta
1/2 tsp pepper
Steam the broccoli till tender. Put half and half and 2 cups water in the top of a double boiler. Add cheese, salt and pepper. Heat till cheese is melted. Add broccoli. Mix cornstarch and water in a small bowl. Stir into the cheese mixture in the double boiler and heat over simmering water till the soup thickens.
