Thumbs up Picadilly's Carrot Soufle .. AWSOME

1 3/4 pounds carrots, peeled and chopped

1C white sugar

1 1/2 t each of baking powder and vanilla (I add just a tad more vanilla because I love vanilla)

2T flour

3 eggs beaten

1/2 C marg. softened

2t powder sugar (optional)

Preheat oven to 350 degrees

Boil carrots until very tender. Drain and transfer to a large mixing bowl.
While carrots are still hot/warm, use electric mixer to beat carrots with the sugar, baking powder, and vanilla until smooth.
Mix in the flour, eggs and margarine.
Transfer to a 2qt baking dish.

Bake 1 hour or until top is golden brown..Sprinkle lightly with powdered sugar if desired....

This can be made in advance and refrigarated until ready to cook...Freezes very well also..
Very easy to double and triple this receipe.

BarBar just loves this and it was a big hit at the church potluck...

That sounds awsome.....ringing of the ears and caffine?? hmmmm, maybe that is why mine gets so bad sometimes...maybe I should go to dcaf if that helps...just gotta have that coffee ..lol..Do you use a round or 11*13? or does it matter?

I use a 13x9x2" baking pan, but don't see much difference except ther are less edges.
Caffine can cause the tenitis to worsen. One Dr. perscribed a LOT of Ginsing, but that didn't help (big ear clinic here), and the other Dr. said Decaf only! That means no chocolate, decaf coffee, tea, etc. Sure has helped dh, but he does miss his chocolate. He doesn't mss the ringing!

Don't really eat much choc myself..once in a while..perhaps I will try the dcaf coffee, my tea is decaf...anything to get rid of the ringing...Thanks for the info
