Coconut Cream Pie from The Glass House

Back in the 1960's there was a chain of restaurants that we used to go to, they were called "The Glass House", that was a day trip to go out I-65 to go to it, back when you used to go for Sunday drives. I don't believe any are still around any longer. It was a chain in the South; does anyone else remember any of them? Anyway I found this recipe in ome of my grandmother's recipe files listed as from "The Glass House"

Coconut Cream Pie

2 large eggs
1 pint milk
1 cup sugar
Pinch of salt
2 heaping tablespoons cornstarch
1 tbsp butter
1/2 tsp vanilla
1 8" pie shell baked
1 cup coconut, shredded

Separate eggs, saving whites for meringue. Beat yolks into 3/4 cup of milk, adding sugar and salt. Heat in double boiler. Mix cornstarch and remaining milk and blend with first milk mixture. Add butter. Stir till this mixture thickens and sticks to spoon. Remove from heat and add vanilla. Pour half of cream filling into pie shell and sprinkle with coconut. Add remaining filling and sprinkle with additional coconut. Cover pie with meringue made with egg whites. Sprinkle remaining coconut over top. Put into a 350 degree oven till meringe and coconut are browned.
