Ol' Kentucky Cinnamon Coffee Cake

This recipe is from Brand House At Rose Hill in Lexington, Kentucky. A Southern Inn built in 1812 as a private residence and opened in 1995 as a bed and breakfast.

1 cup chopped walnuts
1 1/2 cups firmly packed brown sugar
2 cvups all purpose flour
2 tsp baking powder
1 tsp salt
3 tsp cinnamon
3/4 cup butter, softened
1/2 cup sugar
1 (3.4 oz) pkg. instant vanilla pudding and pie filling
1 (3.4 oz) pkg. instant butterscotch pudding and pie filling
1 tsp vanilla
4 eggs
1 cup water

Heat oven to 350 degrees. Butter a 13 x 9" pan. In small bowl combine walnuts and brown sugar and mix well. Set aside. In another bowl combine flour, baking powder, salt and cinnamon and mix well. In a large bowl beat butter till fluffy. Add sugar and pudding mixes and beat till smooth. Beat in vanilla and eggs. Alternately add flour mixture and water beating well after each addition. Pour half of batter into buttered pan and top with half of walnut mixture. Cover with remaining batter and walnut mixture. Bake at 350 degrees for 40 to 45 minutes or till toothpick inserted in center tests clean. Serve warm. Makes 12 servings
