3/4 lb manchego, coarsely grated
salt & pepper
1/2 clove garlic
2 tbsp minced parsley
3 tbsp olive oil
salt & pepper
1/2 cup panko bread crumbs

In a food processor combine garlic minced parsley and olive oil and puree.
Add panko breadcrumbs. As this mixture processes it should turn green in color. Adjust seasoning with salt and pepper. Fill a large pot with water seasoned with salt. Bring to a rolling boil. Add pasta shells and stir frequently to avoid sticking. Remove when al'dente and drain. This pasta will continue to cook when heated with the sauce in the oven. In a large pot over medium high heat add heavy cream and slowly bring to a boil. Stir with a heatproof rubber spatula making sure that the bottom does not burn. Add the cooked shells and return to a boil. Remove from the heat and slowly add cheese. Adjust seasonings with salt and pepper. Place mixture in a large ovenproof casserole dish and top with breadcrumb mixture.Preheat oven to 325 degrees. Bake casserole about 30 minutes. Let cool 5 to 10 minutes before serving. Serves 4
