Black Beans

What can you make with a can of Black Beans? Besides the usual black beans and rice, brownies, and salads using them what else is there? Do you have any recipes to share? Black Beans are something I stock up on when I get a good price and would like some different things to do with them.

Cat, we love black beans! I use them a lot. I put them in all sorts of dishes and baking goods too. They are excellent in chili and I have a rice, veg and meat recipe that I will post here when I have more time. It is truly delicious on a busy day. They can be used in stir frys, chili, tacos, soups, brownies, cookies and cakes. They are also really tasty when you mash them some and put them into your burgers or lasagne meat. It adds a depth of flavour and also nutrients.

I mix them into a chicken mixture to make enchiladas. They are good in just about anything Mexican. It's the only bean besides green beans that my dh will eat.

I have a really good and really easy recipe for black bean quesadillas. I'll have to go find it and post it on here.

Here's the recipe:

Black Bean Quesadillas

Nonstick cooking spray
4 (8-inch) flour tortillas
3/4 cup shredded Monterey Jack or Cheddar cheese
1/2 cup rinsed & drained canned black beans
2 green onions, sliced
1/4 cup minced fresh cilantro
1/2 teaspoon ground cumin
1/2 cup salsa
2 tablespoons plus 2 teaspoons sour cream

Preheat oven to 450F. Spray large nonstick baking sheet with cooking spray. Place 2 tortillas on sheet; sprinkle each with half the cheese.

Combine beans, green onions, cilantro and cumin in small bowl; mix lightly. Spoon bean mixture evenly over cheese; top with remaining tortillas. Coat tops with cooking spray.

Bake 10 to 12 minutes or until cheese is melted and tortillas are lightly browned. Cut into quarters; top each wedge with 1 tablespoon salsa and 1 teaspoon sour cream.

I usually double the recipe to make 4 quesadillas.

Here is a recipe site that has 592 black bean recipes. I have tried a few and they were pretty good. If nothing else it will certainly get your creative juices flowing.

I just did a quick search on the forums and found these,

Black Bean Brownies this is by Barbzy and they are good!

Crock Pot Chicken W/ Black Beans & Cream Cheese this is by Sandy1970 and I think I am going to have to try it soon, sounds great.

California Black Bean Burgers another doozy by Barbzy!

There are 14 pages, some games etc., but a lot of recipes if you want to try a search. Some look really tasty! Thanks for getting me looking, black beans are going to be on the menu a lot from now on.
