Ways To Use Up Hard Boiled Eggs

We have been having an over abundance of eggs and I have been trying to find ways to use them besides the usual ways. Here are a few I have come up with, but wondered if anyone else has some other ideas?


Bacon and Egg Dip

Stir chopped hard boiled eggs andcrumbled bacon into sour cream and onion dip; serve with fresh veggies.

Breakfast Burritos

Put chopped hard boiled eggs, shredded lettuce and cheese and chopped bell peppers in a flour tortilla, roll up and serve with salsa.

Meatloaf Surprise

Put half your uncooked meatloaf mixture into a pan, then top with 2 or 3 peeled whole boiled eggs, top with remaining mixture and bake as usual.


Layered Salad

In a larger glass bowl layer sliced hard boiled eggs, green and red bell peppers, lettuce, radicchio and shredded carrots. Drizzle with salad dressing.

I like chopped egg & celery in tuna salad.

We eat a lot of hard boiled eggs whole, pickled with beets, with a chef salad, as deviled eggs, or just smashed with mayo & mustard for those that don't want to take the time to make deviled eggs.

My Mom used to put sliced egg on cooked spinach.

My grandmother also used to put a sliced hard boiled egg on her cooked spinach; I had forgotten that, thanks for the memory!

Slice some over Salad greens. If you really have extras let your kids have an egg race on a spoon and let them eat the eggs after the race.
