I'm looking for some low cholesterol recipes that don't take long to make as I work 9 hours most days and don't have a lot of time to make dinner. Things that can be partially made ahead of time would be helpful too.
I don't have any recipes to share but a lot of meals you can do the prep on days off. Keep the first two days of meals in the frigerator and freeze a couple for use later in the week to put in a crock pot in the morning.
I don't have any real cooking recipes, but an acquaintance of ours said one way they stay healthy is to set a side money for "daily" shopping. This way you are getting your products the freshest they can be. We haven't tried that yet, but we do buy a lot of foods in bulk (lettuce, vegetables, etc), and we read the labels more when we shop too. AN example of this is the new Fun stix cookies from Oreo are actually less carbs and sugars then in the actual oreo cookies (I think it is like 20 carbs or less vs 25 carbs). One thing my DH does do for me on occasion is fresh steam / sauteed spinach and garlic, I also steam broccoli and chop cucumber slices to add to our salads. We also eat a lot less carb packaged foods (foods with 25% or more carb in them are out), more wheat and grain breads and noodles, and lots of frozen boneless & skinless chicken pieces (also in bulk). They are pretty useful in casseroles (prepare a head of time and bake when needed), salads, shredded and used on sandwiches, taco's, etc. Every once in a while we have ground beef on tacos, spaghetti, lasagna, etc I know there is a low calorie mini cook book available - I think it is from Betty Crocker, but not 100% sure

How many grams of cholesterol are you going for per serving on foods? I have lots of recipes that are low cholesterol if you are interested, but don't know on what level you are looking. Let me know and I will be glad to share with you!

Here is a way to make "deviled" eggs something you can eat!
1 dozen hard boiled eggs
20 oz tofu, drained
3 tbsp spicy brown mustard
1 tbsp reduced calorie mayonnaise
paprika
Peel the eggs and slice lengthwise, remove yolks and discard (I feed mine to the dogs and cats). Put tofu into a large bowl and mash. Add mustard and mayonnaise and mix well. Stuff into the egg whjotes and sprinkle paprika on top of each filled egg. Serves 12 ...2 halves per serving

Salmon and Pasta Salad
1 cup uncooked elbow macaroni
2 tsp olive oil
1 7 2/3 oz can salmon, drained and skin removed
1 tbsp worcestershire sauce
1/2 medium onion, minced fine
1 10 oz pkg. frozen green peas defrosted
1 large red bell pepper, diced
DRESSING
1 cup lowfat cottage cheese (I use fat free)
2 tbsp fresh lemon juice
3 dsshes hot pepper sauce
2 tsp dried dill weed
Cook macaroni according to pkg directions but omit the salt. Drain and rinse under cold running water tilol cool and drain and place into a bowl, add oil and mix; then set aside. In a bowl mash salmon including the bones (gives you calcium). Add worcestershire, onion, peas, bell pepper and cooked macaroni. Mix well. In a blender process the cottage cheese, lemon juice, and hot pepper sauce till creamy. Mix in dill and then pour over the salmon pasta mixture and stir. Refrigerate and serve chilled. Serves 8 (1 1/2 cup per serving)
