Thumbs up Old Fashioned Tea Cookies

1/4 c. butter
3/4 c. sugar
Grated rind of 1 orange
1/4 c. orange juice (I was out of orange juice so I used pineapple juice instead)
1 egg
2 c. sifted flour
2 tsp. baking powder
1/4 tsp. salt
additional sugar

Cream butter, sugar, orange rind, orange juice (or pineapple!) and egg. Beat thoroughly. Sift flour, baking powder and salt. Add to mixture and mix thoroughly. Place on a floured board and roll thin. Cut with a large round scalloped or plain cookie cutter. Place on a greased cookie sheet and sprinkled with sugar. Bake in a 350 degree oven for about 12 mins. Makes 72 cookies. They're good!
