Zucchini Nut Cookies

1/2 c. packed brown sugar
1/2 c. white sugar
1/2 c. shortening
1 egg
2 c. sifted all-purpose flour
1 tsp. baking soda
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/4 tsp. salt
1 c. grated zucchini
1 c. raisins
1/2 c. chopped walnuts
Preheat oven to 325 degrees F. Grease cookie sheets.
Cream together shortening, brown sugar & white sugar 'til smooth. Beat in egg. Combine the flour, baking soda, salt, cinnamon, nutmeg, & cloves; stir into the creamed mixture. Mix in zucchini, raisins & walnuts. Drop by rounded Tablespoons onto the prepared baking sheets.
Bake 15 min. in the preheated oven, or 'til lightely browned. Cool on the cookie sheets for a few minutes before removing to wire racks to cool completely.

I hope you like it Sueanne.
You otta try out the recipe I posted for Zucchini Patties in the side dishes catagory.
It don't sound or look like it would be good but my husband & I really liked them.
I like to try out different things & I'm glad I did. Will be making zucchini patties every yr. with our over abundance of zucchini :-)
