This recipe is from 1938. It was given on a old time radio show that was sponsored by the Pet Milk company. These are so easy to make and taste wonderful. I received the recipe through my grandmother who had made some changes to the recipe. Both are below
Stuffed Vanilla Wafers
2TBS Butter 2TBS Flour
1/8 tsp Salt 1/2 cup Pet Milk
16 (1/4 lb) Marshmallows
1 1/2 cup (4 oz) shredded coconut
18 (6oz) Vanilla Waffers
Melt the butter in a double boiler. Blend in the flour. Stir in salt slowley. Add pet milk and cook slowley until thick and smooth stirring constantly. Add the marshmallows and continue cooking. While stirring till the marshmallows are melted. Remove from heat and fold in 1 1/2 cup shredded coconut. Cool. Spread on flat side of 18 2" vanilla wafers. Place 18 more vanilla waffers flat side on top of coconut filling (if you are using regular vanilla waffers double the amount you use). You can also place filling on sugar cookies, or graham crackers.
Varriation:
When finished making the filled vanilla waffers place on a cooling rack. Melt some semi-sweet chocolate chips and poor over them to make a chocolate covering for them. Let set and turn them over and repeat so that they are compleately covered
