I love these! I sometimes put anisette in place of the vanilla and they taste fantastic. It is a licorice flavored italian liquor.

Thanks ladies for posting these recipes. I've been wanting pizzelles forever! I have a recipe for cinnamon ones & I found a couple of other recipes on the web. I don't care for the anise ones. I've been trying to find a pizzelle iron, but if I don't find one locally, I'll try the waffle iron that Sueanne suggested. I'd rather find one in a store here since the shipping charges are so high.

Just thought I would tell you Jcpenney and Target both carry Pizzelle makers/irons. Also you might check www.ebay.com, as I saw they have several for sale on there, also www.amazon.com has pizzelle irons. Also you might even find one at a thrift store or a garage/yard sale too. I have heard of people even having them for sale in newspapers too. My Mother in Law got us one for Christmas a few years back, she bought it from Jcpenney and it is great. It is a villaware brand one. I use it a lot. Pizzelles are great, now I will have to make some more since you have me thinking about them.

Pumpkin Pizzelles

Been thinking of making pumpkin pizzelles for Holloween & Thanksgiving treats. Great way to get some nutrition along with the sugar.

Pumkin Pizzelles

1 cup granulated sugar
1/2 cup butter softened or oil
2 eggs
1 cup canned pumpkin
1 teaspoon vanilla extract
2 1/2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger

Directions
1 Preheat the pizzelle iron
2 Beat the sugar and butter until light and fluffy,
then add the eggs, pumpkin and vanilla.
3 Sift the dry ingredients together, then afold i
into the sugar mix.
4 Lightly brush the pizzelle iron with butter, then drop a teaspoon amount of dough onto the iron. Close the lid and bake for 34-60 seconds.
5 Remove before the cookies cool you can shape
them into cones or rolls or shallow bowls, if you
want, or leave them flat.

I checked Target online & it is an online order only. I'm going over to Target this weekend so I'll check in the store. I don't do Ebay or Amazon. Thanks for the info.

MMMMM Sueanne those pumpkin ones sound delicious. Thanks for posting the recipe.

If nothing else, I'll get a small waffle iron to make some.. my mouth is watering!
