Today I have been making cookies and snacks for the kids' lunches this week. I tried some Cake Mix Cookies for the first time and are they good... nice and chewy. Here is the recipe:
CAKE MIX COOKIES
1 pkg. cake mix (I used white cake mix with pudding in it)
1/3 cup oil
2 eggs
Preheat oven to 375. In large bowl, combine cake mix, oil and eggs. Stir until throroughly moistened. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake at 375 for 6-8 minutes or until edges are light golden brown. Cool 1 minute and remove from cookie sheets to cool further before eating.
The boys actually wanted chocolate cookies and I didn't have chocolate chips, so I added a small box of chocolate pudding mix and about 3/4 cup of shredded coconut for fun. This made the mix a little dry, so I added maybe 1/4 to 1/3 cup of water and stirred it all really well. The cookies came out so chewy, all moist on the inside and crispy on the outside. I will definitely make these again!
