| Louisville creamed chicken

LOUISVILLE CREAMED CHICKEN
3 tbsp butter
1 1/2 cups milk
1/2 cup pimento, diced
3 tbsp flour
3/4 cup mushrooms, sliced
1/2 cup hot chicken broth
4 cups cooked chicken, diced
celery salt
few drops of lemon juice
Melt butter, stir in flour and seasoning, slowly pour in milk and broth, stirring constantly. Bring to boiling and add diced chicken seasoned with the celery salt. Let stand in double boiler over boiling water 20 to 30 minutes and serve hot over corn bread squares. |
