1 tablespoon olive oil, or favorite fat
1 medium onion, diced
1 cup leftover cooked chicken, diced or shredded
2-4 cups shredded cheddar or Mexican blend shredded cheese
1 can, diced green chilies, drained
leftover, or canned refried beans
6 flour tortillas
In a frying pan, take the oil and onions. Saute until the onions are caramelized. Place in separate container and wipe out pan. Liberally spread refried beans on tortilla to cover the surface. Place the uncovered side down. Cover the refried beans with a liberal amount of cheese. Add 1-2 tablespoons onions and the chilies. Add 1/4 the chicken. Sprinkle more cheese over the chicken so that when it melts, it will glue the other tortilla to the top. Top with another tortilla. Cook, covered, on low, until brown on one side. Turn and brown on the other side and the cheese is melted. Cool for a few minutes and cut into quarters. Can serve with guacamole, sour cream, salsa, or tomatoes. Makes three. You can substitue taco meat for the chicken or make a cheese only type. If you are in the mood for something sweet and spicy, you can substitute the green chilies for jalapenos and diced pineapples.
