Comparing Similar Recipes We thought it would be fun to see how each person makes a certain recipe or meal. Do you use ricotta or cottage cheese in your lasagna? Do you add ketchup to your meatloaf? Let's compare!

Cheesecakes

Do you like a nice thick and heavy cheesecake or a light and fluffy one? (I opt for thick, heavy and creamy - )

Do you use cream cheese or ricotta in your cheesecake?



I like cream cheese cheesecakes but there is a ricotta cheese cake my uncle makes that is also very good.



Here is a fast recipe that I use most of the time that is SO good. I have made it using ALL no-fat ingredients and sugar substitute and NO ONE noticed... you have to try it.

No Crust Cheesecake

Cake:

2 pkg. cream cheese, softened
2/3 cup sugar
3 eggs
1/2 tsp. vanilla extract
1/4 tsp. lemon juice

Topping:

2 cups (16 oz) sour cream
3 tbs. sugar
1 tsp. vanilla extract
1/4 tsp. lemon juice

Preheat oven to 325 degrees. Grease (or use non-stick spray) a 9" glass pie dish. Place cream cheese and sugar in a bowl and mix until creamy. Beat in the eggs, one at a time. Add vanilla and lemon juice. Spoon mixture into the prepared pie dish. Bake 45 - 50 minutes, until golden brown. Remove from oven and let cool for 10 - 15 minutes. (DO NOT TURN OVEN OFF).

Meanwhile in another bowl, mix together the Topping ingredients. Spread over the top of the baked cheesecake and bake for 20 minutes longer. (The top will remain almost liquid).

Let cool , then refrigerate for at least 4 hours or overnight.

NOTE: You may use canned filling or fresh fruit before serving.

Ooooooooh I loooooove cheesecake! MMMMMMMM

I have a great recipe for chocolate chip cheesecake. I got this from a woman I used to work with, she made it for an office Christmas party and it was devoured! I have made it several times since then and it's always a hit. I haven't made it in a long time now, so I think it's time to pull out the stuff!

No Bake Chocolate Chip Cheesecake

2 1/4 cups Oreo cookie crumbs
1- 12 oz pkg Nestle Little Bits
2/3 cups margarine, melted, cooled to room temp
1/2 cup milk
1 envelope unflavored gelatin
6 oz cream cheese (2- 3 oz pkgs), softened
1- 14 oz can sweetened condensed milk
1- 8 oz container of Lite Cool Whip

In bowl, combine cookie crumbs, 1 cup of the Little Bits, and margarine, mix well. Pat mixture into a 9" springform pan, covering bottom and 2 1/2" up the sides, set aside.

In small saucepan, combine milk and gelatin, set aside for one minute. Cook over low heat, stirring constantly until gelatin is dissolved. Set aside.

In bowl with mixer, beat cream cheese until creamy. Beat in sweetened condensed milk and gelatin mixture. Fold in remaining Little Bits and Cool Whip. Pour into springform pan, chill in refrigerator for at least 2 hours.

SUBSTITUTIONS

If you prefer, you can use:

-- butter instead of margarine
-- 2 cups heavy whipping cream instead of Cool Whip
-- graham cracker crumbs instead of Oreo crumbs

I've never tried it, but you could try light or fat free cream cheese too.

I also believe that Hershey's makes mini chips.

I used to make so much cheesecake, I got cheesecake cookbooks as gifts! My favorite is pumpkin cheesecake! It uses cream cheese. It's good with crushed ginger snaps as the crust.

My husband grew up thinking cheesecake is made from a box (jello brand), so lately I don't bother spending all that time making one from scratch. He says it all tastes the same to him.

Have any unusual cheesecake recipes? This is one a very dear friend that is no longer with us used to make, very good!

Pineapple Cheesecake

1 9" graham cracker crust
1 8 oz pkg cream cheese
2 tbsp butter, softened
1/2 cup sugar
1 egg
2 tsp flour
2/3 cup milk
1/4 cup lemon juice
1 samll can crushed pineapple

Make your crust using your favorite graham cracker crust recipe and reserve 1/4 cup crumbs for the topping. Cream the cheese till very soft and blend in the butter, sugar , and the egg. Beat well, then add remaining ingredients blending well with each addition. Pour into the prepared crust and bake at 325 degrees for 35 minutes. Sprinkle with reserved crumbs and chill. Makes 8 servings.
