chuckle Salsa Anyone

Anyone have a salsa recipe.

Chunky Cucumber Salsa

Ingredients:
3 medium cucumbers, peeled and coarsely chopped
1 medium mango, coarsely chopped
1 cup frozen corn, thawed
1 medium sweet red pepper, coarsely chopped
1 small red onion, coarsely chopped
1 jalapeno pepper, finely chopped
3 garlic cloves, minced
2 tablespoons white wine vinegar
1 tablespoon minced fresh cilantro
1 teaspoon salt
1/2 teaspoon sugar
1/4 to 1/2 teaspoon cayenne pepper

Directions:
In a large bowl, combine all the ingredients. Cover and refrigerate for 2-3 hours before serving. Yield: 4 cups.

Oooo I love salsa! Here's the recipe I always make, I threw this together myself, so I'm not real sure how accurate the measurements are, I'm one of those "a little bit of this and that" kind of people.

Amanda's Salsa

3 medium tomatoes, chopped
1/2 cucumber, peeled and chopped
1 bunch of green onions, chopped
1/2 bunch of fresh cilantro, chopped (leaves only)
1/2 jalapeno pepper, minced
2 cloves garlic, minced
garlic salt
black pepper

Mix together all ingredients, sprinkle with the garlic salt and black pepper to taste. Add more or less jalepeno pepper to taste. You can use red pepper flakes in place of fresh jalepeno, but if you do, just sprinkle it on, mix then taste. Add more if you want.

I do more the tomato salsa with onion, basil, oregano, garlic and a little balsamic I guess like a bruscetta topping.
I also do a corn and capsicum type salsa, but put in what I've got on hand, this is good mixed with cheeses and put on thick bread and grilled (broiled?) to have hot
