Meatloaf

I have always used the recipe on the back of the McCormick brand meatloaf mix to make my meatloaf. Tonight I am trying a recipe I got out of a magazine. Hope it's good!

How do you make your meatloaf?

Share your ideas, tips and recipes!

Meatloaf varies from time to time but the basics that I use are:

ground beef
bread crumbs (but I don't use this in my low carb meatloaf)
chopped onion
garlic powder
Heinz ketchup (in it, not on it)
a little worchestire sauce

If I want Italian, I add some Italian seasonings and usually spag. sauce for the ketchup.

Sometimes I use Lipton onion soup mix in the first mix above.

I have seen Rachel Ray make some really good looking stuffed meatloaf, too.

We like gravy on our meatloaf, not topped with ketchup or tomato sauce.

Meatloaf...

Hamburger
Crushed Crackers
Egg
Grated Parmesan Cheese...

Mix all ingredients together...put into lightly greased loaf pan...bake at 350' for an hour and top with tomato soup...and cook until meatloaf is done...

I do up several small meatloaves in the small aluminum loaf pans for hubby's lunches at work...he loves them...

I usually make it with ground beef, egg, bread crumbs, seasonings (salt, pepper, garlic), diced onions, diced bell peppers, and 1/4 can tomato sauce. Then, I lay the mixture out in a rectangle. I sprinkle some grated cheese. This can be anything you want. You could also use a mixture of cheese and cooked rice. Roll up the mixture as to keep the cheese mixture inside. Pour the leftover tomato sauce on the top. Bake as you would any other meatloaf. The family thinks you are SO cool when they cut into the meatloaf and there is cheese inside. You could also put parsley in the cheese mixture for added color.

One other recipe that I make are meatloaf pinwheels. I make a rice mixture with rice and parlsey and maybe a little cheese to help hold it together. Then, I spread it on a rectangle flattened meat mixture. Then, roll it, jellyroll fashion. Wrap in plastic and place in fridge for a few hours. Then, slice and bake as you would a meatloaf, except use a cookie sheet and don't cook as long. This is my DHs fave, but since I started college, I don't cook it as often as it is a bit of work.

I use egg, bread crumbs, ketchup, chili sauce, salt and pepper, garlic powder. Mix then put in loaf pan top with chili sauce and a few strips of bacon.
