Chicken & Spinach Risotto

1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into bite-size pcs.
4 c. baby spinach leaves, washed & dried
1 1/2 c. Minute White Rice, uncooked
1 c. grape or cherry tomatoes, halved
1 can (10 1/2 oz.) condensed chicken broth
1/2 c. water
1/4 c. Parmesan cheese, grated
Heat oil in lg. deep nonstick skillet on medium heat. Add chicken; cook 10 min. or 'til chicken is cooked through, stirring frequently.
Add spinach, rice, tomatoes, broth & water; mix well. Bring to boil. Reduce heat to low; cover. Simmer 5 min; stirring occasionally.
Stir in Parmesan cheese.
We seasoned ours w/ salt, season salt, pepper & minced onion.
Serves 4
*I got this recipe off the box of the MINUTE White Rice. Very good & very easy & fast to prepare.

This was pretty good, I used frozen spinach,(thawed and squeezed all the water out),instead of fresh, and I also added some fresh mushrooms(about 3/4 cup) to it, I will definately make it again! "

I'm glad you liked it. I've used frozen spinach for this and it turned out fine as well.
Good way to get my daughter to eat more veggies.

Congrats Sandy1970. I believe I would like this even though it has spinach in it. It sounds good.
