Brother Pat's Firehouse Tex-Mex Dish
A little something I used to make when I was working as a Paramedic/Firefighter
Ingredients:
One Large Bag of Doritoes Regular Flavor Torrtilla Chips
2 to 3 Lbs of Ground Beef
2 Cans of Rotell Tomatoes with green chillies
(We Used the spicy ones but you can use the mild to tone the flavor down if needed)
2 Cans of Cream of Mushroom Soup
One Block of Kraft Velveeta Cheese
Preperation:
Place the Ground Beef in a Large Pan of Water and boil for about
15 minutes.
While Beef is boiling
Layer the bottom of a Casseroll dish or Pan with Doritoes and set to the side.
When Beef is done remove from heat and Drain the water and grease off.
Drain the excess juice off the Rotell Tomatoes and then mix them along with the Cream of Mushroom Soup into the Beef and place back on the stove top and let mixture simmer together at low heat for about 15 to 20 minutes stirring frequently to prevent sticking.
After Beef Mixture has simmered for about 15 minutes, remove from stovetop and pour mixture into caseroll dish on top of the Doritoes and spread evenly.
Then place another layer of Doritoes on top of the mixture.
Then Grate Velveeta cheese all over the top of the Doritoes
And place in the oven long enough to melt the cheese.
Remove from the oven and serve.
Makes a delicious Dish.....Yumm Yummmmmmm
