Hi, I'm new to this group and I have 2 new recipes that are similar to what you are describing, but probably not exact. Here goes.

Taco Casserole

1 lb. ground beef
1 can (15 oz.) chili beans in sauce, undrained (I would suggest smashing a little bit with a potato masher)
1 can tomato sauce
2 T taco sauce, picante or salsa
2 - 4 t. chili powder (to taste)
1 t. garlic powder
2 c. coarsely broken tortilla or nacho chips
1 c. sour cream
8 medium green onions, diced
1 medium tomato, chopped
1 c. shredded cheddar and 1 c. monterey jack cheese

Toppings: May add shredded lettuce and additional taco sauce, if desired.

1. Heat oven to 350. Cook beef until browned. Stir in beans, tomato sauce, taco sauce, chili powder and garlic powder. Heat to boiling, stiring occasionally.

2. Place chips in ungreased 2 qt. casserole. Top with beef mixture. Spread with sour cream, sprinkle on onions, tomato and cheese. (We just baked the beef mixture and cheese, and then added the sour cream, onions and tomato as toppings)

3. Bake uncovered 20 - 30 minutes or until hot and bubbly. May add additional chips, lettuce, taco sauce, or whatever taco toppings you may like.

I have another recipe that I have not tried yet, but it sounds real good. I will post it shortly.

Brown beef; drain, stir in salsa, corn, miracle whip and chili powder. Layer 1/2 meat mixture, chips and cheese. Repeat layers.

chuckle cheesy nacho bake

Thank you for all that replied to my request. I liked the couple recipes you did give me. But being desperate to retrieve the recipe, I did a search for knudsen's sour cream (I knew that was an ingredient) and it took me to the kraft website and the recipe!! YEA! So here it is! Tell me if you try it and what you think. (like I said, we omit the chips in the baking, but use them to scoop the delicious cheese dish YUM YUM!!

Cheesy Nacho Bake

Ingredients
1-1/2 lb. ground beef
1 can (14-1/2 oz.) diced tomatoes, undrained
1/2 cup water
1 pkg. (1-1/4 oz.) TACO BELL HOME ORIGINALS Taco Seasoning Mix
1 cup BREAKSTONE'S or KNUDSEN Sour Cream, divided
1 pkg. (9 oz.) tortilla chips (8 cups)
1 pkg. (8 oz.) KRAFT Shredded Colby & Monterey Jack Cheese

Preparation
Brown meat; drain. Add tomatoes, water and seasoning mix. Cook, uncovered, 10 minutes, stirring occasionally. Stir in 1 cup of the sour cream.

Place 1/2 of the chips in 13x9-inch baking dish; cover with 1/2 of the meat mixture and 1/2 of the cheese. Repeat layers.

Bake at 350°F for 20 minutes or until thoroughly heated. Top with remaining sour cream, chopped tomato and green onion, if desired.

Easy Taco Pie

My In-laws dropped by unexpectedly one day. I hadn't shopped in a while and the larder was looking pretty pitiful. I wanted to make Nachos, not enough chips, wanted to make wet burritos - out of Tortilla shells. Had a frozen pie crust though - thought maybe I could Gerry-rig something.

1 Lb. Burger
1 large onion
Fry - drain
1 pkt taco seasoning
Mix in with some water to dissolve and then cook down
1 can refried beans
Mix in.

Pour into pie crust bake 350 for aboaut 15 minutes then top with:

1 cup or so of shredded yellow cheese.

Cook for another 5 min or so 'till the crust is golden ant the cheeze is melted.

Cut into wedges serve with shredded lettuce, tomatoes, hot sauce, sour cream etc., all the fixin's along with a few chips.

It was a Great Hit - Even the kids loved it - and it served 4 hungry adults and 2 kids.

Chicken Taco Casserole

--------------------------------------
3 lb chicken
1 cup onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1-2 teas chili powder
garlic powder to taste
1 can whole tomatoes in juice (chop them)
1/2 package Doritos
1 cups grated cheddar cheese (optional)

Boil chicken until tender; cut into bite-sized pieces and place in casserole dish. Saute onion and add to chicken. Mix soup, seasonings and tomatoes. Add to casserole and stir thoroughly. Sprinkle with crumbled Doritos and top with cheese. Bake covered for 30 minutes at 375º. Uncover and bake
until cheese browns slightly.

Ok, so I never follow a recipe. This is what I did :

I used (3) raw chicken breasts (bnls/skls) - placed them in casserole dish after spraying it with Pam. I sprinkled the garlic powder and chili powder on top of the chicken. Then I topped it with a few rings of onions. I mixed a can of pureed tomatoes with a can of cream of chicken and a can of cheese soup together and dumped it over the chicken then, the chips and cheese. I baked it at 375º for 35 minutes. It was good. Try it, let me know
how it turns out.

2 cups shredded cheese (Cheddar, Jack, Pepper Jack, a mix of those), with 1/2 cup reserved

Taco Twist Casserole

This recipe makes a big pan and can easily be halved. You can make it less spicy by using a mild taco mix and salsa. Also can be made ahead as long as you let the meat mixture cool down a bit before you put it all together. Just bake a little longer.

Taco Twist Casserole

2 lbs ground beef
1/2 green pepper, chopped
2 pkgs taco seasoning
28oz. can tomato sauce (may add more if it looks a little dry to you)
3/4 c salsa
16 oz. corkscrew macaroni, cooked & drained
2c shredded cheddar cheese, divided
1c sour cream

Cook beef and pepper til done, drain.
Add sauces and taco mixes , simmer on low 5 min.
In large pot you cooked pasta in (to save on dish washing, lol) mix pasta and sauce together, add 1 cup of cheese and all the sour cream.
Spray 13x9x2 pan and pour mixture in . Top with remaining cheese and bake 350° for 30 min or until bubbly.

Submitted by: LUNCH*LADY

Makes 6 servings

Prep Time: 15 Minutes
Cook Time: 20 Minutes
Ready in: 35 Minutes

" A simple meal to whip up in less than an hour that even the kids are sure to love. Layers of seasoned ground beef, corn, tortilla chips and cheese are baked under a layer of Colby cheese. Monterey Jack is also good in place of the Colby cheese. "

Ingredients

1 pound ground beef
1 1/2 cups chunky salsa
1 (10 ounce) can whole kernel corn, drained
3/4 cup creamy salad dressing (e.g. Miracle Whip)
1 teaspoon chili powder
2 cups crushed tortilla chips
2 cups Colby cheese

Directions:

1 Preheat the oven to 350 degrees F (175 degrees C).
2 Place ground beef in a large skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain grease. Remove from the heat, and stir the salsa, corn, mayonnaise and chili powder into the beef. In a 2 quart casserole dish, layer the ground beef mixture, tortilla chips and cheese twice, ending with cheese on top.
3 Bake for 20 minutes uncovered, in the preheated oven, until cheese is melted and dish is thoroughly heated.

Makes 6 servings
