Hot Brown Casserole from Brownings

Hot Brown Casserole from Brownings

8 pieces of white bread, toasted
1 pound cooked turkey breast
8 slices of a medium size tomato
Mornay Sauce (recipe follows)
12 oz Parmesan cheese, shredded
8 slices cooked bacon

Spray a cassrole dish with nonstick cooking spray. Layer the bread, sliced turkey and tomatoes. Pour the mornay sauce over all and top with the parmesan cheese and slices of bacon. Bake at 350 degrees till hot and bubbly and golden brown. Serves 4

Mornay Sauce - Makes 4 cups

2 cups milk
1 cup heavy whipping cream
1 cup half and half
kosher salt to taste
1/2 tsp garlic powder
1/2 tsp onion powder
pinch ground nutmeg
pimch cayenne pepper
1 clove
1/2 cup yellow onions, peeled and diced
1/2 stick unsalted butter, room temperature
1/2 cup all purpose flour
1/2 cup room temperature water
1 cup parmesan cheese, grated

Combine the first three ingredients in a stockpot. Add all seasonings, spices, and onions. Add butter and heat tillo simmering. Whisk till butter has melted and blended together. Add salt of necessary. In a room temperature bowl put the flour and addf the room temperature water; whisk till it is like a thick pancake batter. Mix well to remove any lumps. Strain into the pot through a fine mesh strainer. It should start to thicken (if it doesn't thicken, start over). Bring to a boil and then reduce heat to a simmer and cook 15 to 20 minutes whisking occasionally. Add the parmesan cheese at the end. Stir into the mixture and remove from the heat. Strain the liquid through a fine mesh strainer. Use immediately or cool and store for a later use.
