Popover Pizza Casserole

This recipe was orginally posted by Cat lover in the April 2011 What's for Dinner thread.


POPOVER PIZZA CASSEROLE

1 lb ground turkey breast
2 cups sliced fresh mushrooms
1 1/2 cups summer squash, chopped
1 cup onion, chopped
1 cup chopped green bell pepper
1 15 oz can pizza sauce
1 tsp dried Italian seasoning
1 cup skim milk
1/2 cup Egg substitute (like egg beaters) OR 1 whole egg + 2 egg whites
1 tbsp olive oil
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 cup shredded mozzarella cheese

Preheat oven to 400 degrees. In a skillet that can go into the oven (I use cast iron), cook the turkey. Steam the mushrooms, squash, onion and bell pepper till tender. Combine the vegetables in the skillet with the cooked meat. Stir in the pizza sauce, and the Italian seasoning. Bring to a boil, reduce heat and simmer uncovered for 5 minutes. Spread to an even layer. For the popover toppping: In a medium bowl combine milk, eggs ,and oil and beat with an electric mixer for 1 minute at medium speed. Add the flours and beat 1 more minute till smooth. Sprinkle the mozzarella cheese over the meat mixture in the skillet. Pour popover topping evenly over the mixture in the skillet and cover it completely. Bake, uncovered about 35 mimnutes or till the topping is puffed and golden brown. 6 servings
