| Chicken Tetrazzini

Chicken Tetrazzini
1/2 lb fresh mushrooms*
3 tbsp butter
6 oz noodles, cooked and drained
2 tbsp butter
2 tbsp flour
2 cups chicken broth
1 cup evaporated milk
2 tbsp apple juice **
2 cups diced cooked chicken
grated parmesan cheese
Slice the mushrooms thin and saute in 3 tbsp butter till soft. Make the sauce of 2 tbsp butter, flour and broth, stirring constantly till thickened and smooth. Blend in the evaporated milk and apple juice. Add mushrooms, noodles and the chicken and mix well. Put into a greased baking dish and cover with the cheese. Bake at 350 degrees till hot and bubbly; aboput 25 minutes or so. Serves 6
* I think the fresh mushrooms taste the best, but canned would work, then simply omit the cooking of the mushrooms in the butter and directly mix the mushrooms into the sauce mix later in the recipe as directed.
** sherry can be used OR white wine
