Kraut and Hot Dog Dinner
1 clove garlic, minced
1/2 cup onion, chopped
5 tbsp butter
2 cups drained sauerkraut
3 tbsp splenda
1/2 tsp pepper
1 - 4 oz ctn pimentos, diced
8 carrots, peeled and cut into 1" pieces
1/4 cup light brown sugar, firmly packed
1 tbsp light corn syrup
2 tbsp yellow mustard
8 hot dogs
4 servings mashed potatoes
melted butter
Saute garlic and onion in 3 tbsp butter till tender. Add sauerkraut, sugar, and pepper. Drain the pimentos and add to sauerkraut mix and toss till combined. Keep warm over a low heat, covered. Simmer the carrots in water about 20 minutes till tender, then drain. Combine remaining butter, brown sugar, corn syrup, and mustard in a small pan and heat till blended, stirring constantly. Pour over the carrots and toss till coated. Put sauerkraut mix in the center of a large heatproof dish. Cut a few diagonally slits in the hot dogs and brush them with melted butter. Put the hot dogs slit side down, carrots and mashed potatoes around the sauerkraut mix and drizzle melted butter over the potatoes. Broil 6 to 8" from heat till hot dogs are browned. Makes 4 servings
