Fiesta Bake
1 lb. ground beef (or ground chicken)
1 cup chopped onion
3/4 cup salsa
1 package Taco Seasoning Mix
1/4 cup water
1 cup corn (or canned mexicorn with black beans)
1/2 cup olives (optional)
1 package corn muffin mix
4 oz. shredded cheddar (or Mexican cheese blend)
1/2 cup green chilies (optional)
Cook beef and onion until browned. Stir in salsa, seasoning mix and water. Cook over low heat for 5 minutes. Stir in corn and olives. Spoon into 8 inch baking dish. Prepare batter for corn bread according to package. Stir in cheese and chilies. Spread over meat mixture. Bake 30-35 until golden brown.
350 degree oven.
