Chicken Pot Pie
3 chicken breasts, bone-in, skin-on
3 TBSP olive oil
salt & pepper
3 cans chicken broth
2 chicken bouillon cubes
1 1/2 sticks unsalted butter
2 yellow onions, chopped
3/4 cup all-purpose flour
1/4 cup heavy cream
1 1/2 cups frozen crinkle cut carrots
1 1/2 cups frozen peas
1 1/2 cups frozen small whole onions
1 pkg. pie crusts, the kind you unroll
1 egg beaten with 1 TBSP water for egg wash
Preheat oven to 350º. Rub chicken breasts with olive oil and sprinkle with salt & pepper. Roast 35-40 mins, or til cooked thru. When cool enough to handle, remove meat from bones & discard skin. Cut chicken into large bite-sized pieces.
In saucepan, heat chicken broth with bouillon cubes til cubes are dissolved.
In dutch oven, melt the butter and saute the onions over med-low heat 10-15 mins. til translucent. Add flour and cook over low heat, stirring constantly for 2 minutes. Add the hot chicken stock to the sauce. Simmer over low heat for 1 minute. Add heavy cream, chicken, carrots, peas & onion. Mix well.
Turn oven heat up to 375º. Pour chicken filling into 13 x 9 dish, or 4 ovenproof bowls. Brush outside edges of cooking dish with egg wash, and place dough on top. Trim to cover top and fold doughover sides, pressing to make it stick. Brush dough with egg wash, and make a couple of slits in the top.
Place on a baking sheet and bake for 1 hour. I cover it with foil after 15-20 mins to keep the pie crust from getting too brown.
This is very yummy and doesn't use the cream of soups I usually used!
My tip: I usually buy enough chicken for 2 nights, and cook it all at the same time. The 1st night (which was last night for us) I cook the chicken and then while 1/2 of it is cooling, I serve the other half with a baked sweet potato sprinkled with cinnamon & butter and steamed broccoli. By the time dinner is done, the other 1/2 of the chicken is cool enough to debone & de-skin so I can cut it up in cubes and refrigerate til the next night (like tonight).
