Creamy Potato Pork Chop Bake

trekmom originally posted this recipe in What's for Dinner February 2009.

Creamy Potato Pork Chop Bake

1 T. vegetable oil
6 pork chops-we used boneless
1 (10.75oz)can cream of celery soup
1/2 c.milk
1/2 c. sour cream
salt and pepper to taste
1 (20oz) package frozen hash brown potatoes, thawed
1 c. shredded cheddar cheese
1 1/2c. french-fried onions, divided

Heat oil in a large skillet over med. high heat. Add pork chops and saute until browned. Remove from skillet and drain.
Preheat oven to 350F (175C)
In a medium bowl, mix soup, milk, sour cream, salt and pepper to taste. stir in potatoes, 1/2c. cheese and 1/2 c. onions. Mix together and spread mix in bottom of a 9x13 baking dish. Arrange pork chops over mix.
Cover dish and bake for about 40 minutes, until internal temp. of pork has reached 180F(70C). Remove cover; top with remaining cheese and onions, bake uncovered for 5 more minutes.
Serves 6 and is very tasty.

Sad face

Congrats Pam!!

This was easy to prepare. I didn't change any of the ingredients, but I did cut the recipe in half. There are just the 2 of us & the whole recipe would have made too much for us. The only thing I didn't like about it was the sour cream.. I don't care for sour cream. However, it was really good. I would make it again but would leave out the sour cream & substitute a little bit of plain yogurt.
