Easy Beef Pot Pie

happymomof4 originally posted this recipe in What's for Dinner October 2008.

1 large refrigerated pie crust
2 cups of diced cooked potatoes or 1 can cut up
1 pkg(10 oz)frozen mixed vegetables, thrawed or use 1 can of mixed veggies
1 1/2 cups diced cooked cubed beef or leftover roast or steak
1 can (10 3/4 oz) condensed mushroom soup
1/3 cup water
1 tsp worcestershire sauce
1 tsp dried thme leaves, crushed

Directions

If I don't have leftover beef to use. I cook my cube meat in a small amount of water to they are done.

Heat the oven to 400 F. Let the pie crust stand at room temp. for 15 min. --if you are using the kind that you have to unroll.

If you use can potatoes or veggies make sure you drain the juice out first.

Put the potatoes, vegetables and beef in a deep dish pie plate.

Stir the soup, water, worcestershire and thyme in a med. bowl. Pour the soup mixture over the beef mixture. Gently put the pie crust over the beef mixture. Crimp the edges. Cut slits in the top of the crust.

Bake for 35 minutes until the crust is brown.

Very easy and quick recipe for a busy night.
