Asparagus & Pea Casserole

Asparagus and Pea Cassorole

2-14 1/2 oz cans asparagus spears
1-17 oz can green peas
4 hard boiled eggs, peeled and sliced
cheese sauce (recipe to follow)
1/2 cup buttered breadcrumbs

Drain asparagus and peas, reserve liquid. Cut asparagus into 1-inch pieces. Arrange half peas and asparagus in 3 qt cassorole. Place 2 sliced eggs on top. Pour half of the cheese sauce over eggs. Repeat layers. Sprinkle breadcrumbs on top. Bake at 350 degrees for 30 minutes. Serves 14.

Cheese sauce

6 tbsp butter
1/4 cup all purpose flour
1 1/2 c liquid from asparagus and peas
1 lb process American cheese

Melt butter in sauce pan over low heat. Add flour and cook for 1 minute stirring constantly. Gradually add 1 1/2 cup liquid. Cook over med heat until thickens. Add cheese adn stir until smooth.

I'm gonna have to try this recipe next week. I'm in the mood for something a bit different & something to try to fool my teenager into eating. lololol
I'll let you know how we like it.

I tried the recipe this weekend & we liked it. My 15 yr. old teenage daughter even liked it. If she likes it you know it's good. She's a picky eater. I'm taking the leftovers to work w/ me tonight for dinner. Thanks for sharing.
