Creamy peppermint patties

Here is another Christmas candy I make every year!

1 8 oz. package cream cheese, softened
1 t. peppermint extract
9 cups powdered sugar
1 and a half cups chocolate chips
3 T. shortening

Beat the cream cheese and extract until smooth.
Gradually add powdered sugar, mixing well.
Shape into 1 inch balls. Place on waxed paper lined cookie sheets and flatten into patties.
Chill 1 hour.
Melt chocolate and shortning together until smooth.
Cool slightly.
Dip patties into chocolate and chill until firm.
Store in the refrigerator

Enjoy, Donna

Cream cheese mints

Cream Cheese Mints

(Try not to eat the batter before you make them!)
1 pkg(8 oz)..cream cheese
2 tbls.......1/2 & 1/2 cream
1/4 cup......butter
1 pkg(15oz) white creamy frosting mix(The dry one
in the BOX)I made the mistake and got the one in
the tub already made...doesnt work!
1 tsp........peppermint extract
food coloring as desired

Preparation:

1. Combine cream cheese, half & half, and butter in a heavy saucepan.

2. Stir over low heat until cheese mixture is soft, creamy and butter is melted.

3. Blend in the frosting mix and stir to blend well.

4. Add peppermint extract and food coloring of your choice. You may divide the whole batch to make 2 or 3 different colors.

5. Roll mixture into balls or drop by teaspoonfuls onto waxed paper-lined cookie sheet. Press with fork, or stamp with cookie stamp for a decorative design, if desired.

6. Let mints stand, uncovered at room temperature
until firm and outside is dry. Inside should still be creamy.

For gifts....pack in clear plastic bags or glass jars.
