Post Old-Fashioned Caramels...

OLD-FASHIONED-CARAMELS

1 TBSP. plus 1 cup butter, divided
2 cups sugar
1 3/4 cup light corn syrup
2 cups half and half cream
1 tsp. vanilla
1 cup pecans, chopped


Line a 11x7 pan with foil; grease with 1 TBSP butter and set aside. In heavy saucepan combine sugar, light corn syrup, and remaining butter. Bring to boil over medium heat, stirring constantly, boil gently 4 minutes without stirring. Remove from heat; stir in cream. Reduce heat to medium low and cook until candy thermometer reads 238, soft ball stage. Stir constantly. Remove from heat; stir in vanilla and pecans. Pour into pan and let cool. Using foil, lift candy out of pan. Gently peel off foil; cut candy into 1 inch squares. ENJOY!!!

This recipe is AWESOME and very addicting!

Does this make hard or soft (but not gooey) caramels? My dh loves caramels that are semi soft but not runny.

I bet that these would be great chocolate covered. MMM!

This recipe does make a soft caramel. Believe me, these r DELISH!!!
