POTATO CANDY
1 potato, peeled
1 box powdered sugar
1 small jar peanut butter
In a small saucepan boil potato until well done and mash it. Mix in powdered sugar until it thickens. Roll out on floured surface and spread with peanut butter. Roll up, wrap in wax paper, and refrigerate until cool enough to slice.
