blushing Peanut Butter & Banana Stuffed French Toast......

PEANUT BUTTER & BANANA STUFFED FRENCH TOAST......

1/2 cup granola
8 slices white bread
1/4 cup peanut butter
2 tsp. honey
1 banana, peeled and thinly sliced
1/2 cup whole milk
2 large eggs
1 1/4 tsp. sugar
1/2 tsp. vanilla
1/4 tsp. ground cinnamon
1 1/2 TBSP. butter
maple syrup

Preheat oven to 350. Place granola in bowl and set aside. Spread each slice of bread with peanut butter and drizzle each with honey. Divide banana slices among 4 slices of bread and place. Add remaining bread on top with peanut butter side down. Remove crusts and tightly pinch edges together. Whisk eggs, sugar, milk, vanilla, and cinnamon well. Soak each sandwich for 5 seconds and roll each sandwich in granola. In large skillet heat butter and add sandwiches. Cook 2 minutes on each side and transfer to baking sheet and bake @ 350 for 10 minutes. Serve immediately with maple syrup!
