Country Brunch Skillet
6 strips bacon,fried and broken into pieces
6 cups frozen cubed hash brown potatoes
3/4 cup chopped green peppers
1/2 cup chopped onion
6 eggs
1/2 cup shredded cheddar cheese
In a large skillet
cook bacon til crisp. Remove bacon adn crumble set aside. Add hash browns to skillet, green pepper and onion,cook 2 min. Cover and cook stirring occasionaly till potatoes are brown. Make 6 wells in potato mixture and drop an egg in each well. Cover and cook about 8 to 10 min more, then sprinkle cheese and bacon over eggs.
