Breakfast Casserole
2 1/2 Cups Seasoned Croutons
2 Cups Shredded Cheddar Cheese
2 lbs sausage, hot or mild
4 eggs
2 1/2 Cups milk
1 can condensed cream of mushroom soup
1/2 Cup milk
Place croutons in greased 9x13-inch baking dish and place cheese on top. Fry sausage; drain and place on top of cheese. Beat eggs and 2 1/2 cups milk together. Pour over meat mixture. Cover. Refrigerate overnight. When ready to serve, mix mushroom soup and 1/2 cup milk together and pour on top of casserole. Bake in a 350* degree oven for 45min. to 1hr. Note: To convert to low-fat, substitute low-fat cheese, turkey sausage, egg substitute and skim milk.
