| Popovers Craving some popovers and don't have a popover pan? Well this is your recipe...these are cooked in muffin cups! 2 eggs 1 cup milk 1 cup sifted all purpose flour 1/2 tsp salt 1 tbsp salad oil Grease 6 to 8 muffin cups. In a mixing bowl combine eggs, milk, flour, and salt. Beat with an electric mixer at low speed for 1 1/2 minutes. Add the oil and beat for 1 1/2 minutes. Do not overbeat. Fill the muffin cups 1/2 full. Bake at 475 degrees for 15 minutes. Reduce the heat to 350 degrees and bake 25 to 30 minutes or till brown and firm. A few minutes before they are done, pierce each with a fork to allow the steam to escape. Makes 6 to 8 popovers.
