Popovers

Craving some popovers and don't have a popover pan? Well this is your recipe...these are cooked in muffin cups!

2 eggs
1 cup milk
1 cup sifted all purpose flour
1/2 tsp salt
1 tbsp salad oil

Grease 6 to 8 muffin cups. In a mixing bowl combine eggs, milk, flour, and salt. Beat with an electric mixer at low speed for 1 1/2 minutes. Add the oil and beat for 1 1/2 minutes. Do not overbeat. Fill the muffin cups 1/2 full. Bake at 475 degrees for 15 minutes. Reduce the heat to 350 degrees and bake 25 to 30 minutes or till brown and firm. A few minutes before they are done, pierce each with a fork to allow the steam to escape. Makes 6 to 8 popovers.

Was looking through my recipe files and came across my Popover recipe from years ago. It uses a regular popover pan, but still has good flavor like the one above that uses a muffin pan.

POPOVERS

1 1/4 cup milk
1/2 tsp salt
1 1/4 cups flour
3 jumbo eggs

Preheat oven to 425 degrees. Generously grease the popover cups. Pour milk into a medium mixing bowl and add flour and salt. With a wire whisk beat till blended. Add the eggs one at a time and mix till completely blended. Pour batter into the popover cups, filling 3/4 full. Bake at 425 degrees for 20 minutes. Reduce heat to 325 degrees and cdontinue cooking for another 15 minutes. Serve immediately. Serves 6
