Balsamic Chicken with Thyme.

1/4 cup flour
3/4 tsp each salt & pepper
4 boneless skinless chicken breasts
2 tbl olive oil
1 large onion, sliced thin (2 cups)
1 cup chicken broth
2 tbl balsamic vinegar
1/2 tsp dried thyme
Mix flour, salt & pepper. Dredge chicken and cook in olive oil over medium heat in a heavy or cast iron skillet. Remove chicken to a plate and keep warm. Sauté onion in the pan 2 minutes, then add broth, vinegar and thyme. Bring to a boil, cook and stir about 7 minutes or until onions are soft and sauce is syrupy. Spoon onion sauce over chicken to serve
