Chicken Swiss Melt

Originally posted by barbszy in Dec 2002 WFD thread

CHICKEN SWISS MELT

Ingredients:
4 boneless chicken breast portions
1 can cream of chicken soup
4 slices Swiss cheese
Italian flavored bread crumbs for topping

Use a casserole dish large enough to hold all the chicken in a single layer. Spray dish with nonstick spray. Cover the bottom of the dish with part of the soup. Lay chicken breasts on top of soup. Place cheese on top of chicken, then cover it with the rest of the soup. Sprinkle bread crumbs on top. Cover tightly. Bake 45 minutes at 350. Serve over rice, and don't be skimpy with the sauce!

You can assemble this dish ahead of time and keep in refrig until you're ready to bake it.

I like this one, its a twist to one we make with Stuffing and cream of mushroom soup - that my DH's grandmother gave us.

Awesome recipe!!!

This recipe was sooo yummy and soo easy to fix!! It's a great one to fix in the crockpot, too. My family really loved it! I've fixed it twice since we first tested it, once over mashed potatoes and once over noodles. A definite keeper!! Thanks, Barbzy!! I think I'm going to tweak it a little for a potluck dinner... I'm going to prepare it like the recipe listed, then add diced ham and thin egg noodles and cook it in the crockpot. I'll let you all know how it turns out!!!
