Chicken and Rice

This recipe was orginally posted in July 2011 What's for Dinner Thread by catlover.


Chicken and Rice

6 skinless boneless chicken breast
2 tsp olive oil
4 cups water
2 tomatoes, chopped
1/2 cup green pepper,chopped
1/4 cup red pepper, chopped
1/4 cup celery, diced
1 medium carrot, grated
1/4 cup frozen corn
1/2 cup onion, chopped
1/4 cup fresh cilantro, chopped
2 cloves garlic, finely chopped
1/2 tsp pepper
2 cups brown rice
1/2 cup peas, frozen
2 cups spanish olives
1/4 cup raisins

In a large pot brown the chicken in a hot pot in the oil. Add water, tomatoes, green and red peppers, celery, carots, corn, onion, cilantro, garlic, and pepper. Cover and cook over medium heat for 20 to 30 minutes or till chicken is done. Remove the chicken from the pan and put in your refrigerator. Add the rice, peas, and olives to the pot. Cover the pot and cook over low heat about 20 minutes or till the rice is cooked. Add the chicken and raisins and cook about another 8 minutes.
