Chicken Oriental 8 chicken boneless, skinless chicken breast 8 fresh mushrooms pepper to taste 8 pearl onions, parboiled 2 oranges, quartered 8 cannned pineapple chunks 8 cherry tomatoes 1 6 oz can concentrated apple juice, thawed 1 cup dry white wine 2 tbsp low sodium soy sauce dash ground ginger 2 tbsp vinegar 1/4 cup olive oil Sprinkle the chicken with pepper. Thread eight skewers like this: chicken,mushroom,chicken, onion,chicken,orange quarter,chicken, pineapple chunk,cherry tomato. Put kabobs into a shallow pan. Combine reamining ingredients and spoon over the kabobs. Marinate in the refrigerator at least 1 hour. Drain, broil 6" from heat about 15 minutes on each side, brushing with the marinade every 5 minutes. Discard any remaining marinade, do not serve at table. Makes 8 servings. |
