Chicken A La Orange
2 1/2 pounds chicken breast ,skinned
flour for coating chicken
1/4 cup olive oil
1 cup orange juice
2 tbsp slivered orange rind
1 tsp dried tarragon
orange slices
salt
pepper
paprika
Dust chicken with flour. Put olive oil into a skillet and add chicken to hot oil. Season with salt, pepper and paprika. Remove chicken when cooked trhough. Add orange juice and rind to the skillet. Stir to loosen browned bits and return chicken and sprinkle with tarragon. Cover and simmer about 25 minutes. Garnish with orange slices.
