Juice from 1 orange 1 cup heavy cream Garlic powder to taste Salt & pepper to taste 1 tablespoon dry white wine 2 small chicken breast filets, split & pounded thin 2 ounces cooked spinach, seasoned with salt, pepper, garlic, & butter 2 pieces prosciutto ham 2 pieces provolone cheese Egg wash (1 egg w/a little water, beaten) Flour Oil for cooking chicken rolls 6 mushrooms, sliced 1/2 cup pine nuts(optional) 2 slices mozzarella cheese
In saucepan, mix orange juice, cream, garlic powder, salt, pepper, & wine. Cook over medium heat, stirring until medium-thick sauce consistency. If sauce is too thick, add a little more wine. Wrap chicken around cooked spinach, ham, & provolone cheese. Dip roll in egg wash, then flour. Add a little oil to skillet & sauté chicken rolls until chicken is just done & browned on all sides. Place rolls in baking dish and top with mushrooms, pine nuts, orange sauce, & mozzarella cheese. Bake for 10 to 20 minutes at 400 degrees, until spinach is hot and cheese melts
