Simple Soy Marinated Chicken

Simple soy marinated chicken
4 skinless chicken breasts
1 large orange
2 tablespoons soy sauce
serving of cooked rice
1 shallot thinly sliced.
Method
Slash each chicken breast diagonally approx 1/2-1 inch apart and place them in a single layer in a shallow overn proof dish .
Halve the orange and squeeze juice from one half and mix with the soy sauce.
Pour this over the chicken. Cut remaining orange into wedges and place these on the chicken.
Cover and refrigerate for several hours.
Pre heat oven to 180C or 350F .
Turn the chicken over in the dish and bake uncovered for 20 mins. Turn the chicken over again and bake for a further 15 mins.
Meanwhile cook rice and toss with thinly sliced shallot.
Arrange rice on plate and and fan over sliced chicken and orange wedges with spoonful of pan juices.

Never noticed how much chicken we really eat LOL

Can be pan fried if you want it cooked a bit quicker

This was sooo good and soooo easy! I assembled it befor work and slid it into the fridge to marinate. It cooked quickly when I got home and was an absolute hit! The only request was for more "sauce"! I think I may add a bit more soy sauce and oj the next time I make it.
