| Chicken and Vegetable Kabobs This recipe was originally posted in What’s for Dinner July 2007 by Debknechtel Chicken and vegetable Kabobs. Chicken Kabobs Marinade 3/4 cup oil 1/2 cup soya sauce 1/4 cup white sugar 2 tbsp lemon juice I double the batch of marinade and put the chicken and veggies in separate bags to marinate. Cut up boneless skinless chicken into chunks and put in a ziplock baggie. Cover with marinade and put in fridge for at least 1 hour. Cut up a variety of veggies into chunks(big enough to fit on skewers), I use green pepper, red pepper, yellow pepper, onions, mushrooms and zuchinini. Put veggies in a separate baggie and pour marinade over. Marinade in fridge for at least one hour. Grease metal skewers or soak wooden skewers in water. Place chicken and veggies on skewers. Place on BBQ until veggies are tender and meat is cooked through turning as necessary. Serve with rice. |
