| Lemon Crumb Chicken

Lemon Crumb Chicken
2 tbsp lemon juice
2 tbsp Dijon mustard
1/2 tsp soy sauce
1/4 cup cracker crumbs
1 tbsp lemon zest
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp pepper
1/2 tsp paprika
4 3 oz skinless boneless chicken breast
Preheat oven to 350 degrees. Spray a baking sheet with nonstick cooking spray. In a small bowl, mix lemon juice, mustard and soy sauce. On a large platter combine cracker crumbs, lemon zest, onion powder, garlic powder, pepper, and paprika. Brush chicken with mustard mix and then dredge in mixed crumb mixture pressing crumbs to coat both sides of chicken. Place chicken on baking sheet and bake about 15 minutes, then turn over and bake till chicken is cooked through, about 15 to 20 minutes longer. 4 servings
