Hawaiian Chicken with Pineapple
Up to 1 lb boneless, skinless chicken breasts (for more than this, double the rest of the ingredients)
1 cup soy sauce
1/2 cup brown sugar
1/4 cup pineapple juice (I use juice from the can of pineapple slices I'll serve on the side)
2 - 3 cloves garlic, minced
1 T. sesame oil
2 T sesame seeds
Flour chicken. Fry a little olive oil to light brown, using an ovenproof skillet or cast iron skillet. Mix soy sauce, sugar, garlic, oil, sesame seeds and onions. Pour sauce over chicken and stir to coat. Place in a 350 oven:
For "chunks" of boneless chicken, 10 minutes
For "chicken tenders", 15 to 20 minutes
For boneless breast filets, 25 minutes
Serve with rice and pineapple on the side.
