CHICKEN PARMESAN

4 boneless, skinless chicken breast halves
1 egg
2 cups Italian-seasoned bread crumbs
olive oil for frying
3 or 4 cups meatless spaghetti sauce (reserve some & heat on stove to top the pasta)
1 cup shredded mozzarella cheese, or 4 slices of mozzarella

Dip chicken breast in egg and then in bread crumbs to coat. Fry in olive oil until cooked through. Remove and drain on paper towels.
Cover bottom of casserole dish (big enough to lay chicken in a single layer) with sauce. Place chicken in dish. Cover with sauce and top with cheese. Bake at 350, 15 minutes if you just cooked the chicken, 45 minutes if the chicken was allowed to cool (add cheese for the last 15 minutes).
Serve with pasta of your choice.
serves 4

I didnt have to substitute anything at all!
I did double the recipe because I made 6 large chicken breasts.
I used Marinara sauce and angel hair pasta!

The directions were very easy to follow!

My family very much enjoyed the recipe!!

It was very tasty & juicy.
The flavors were wonderful together!
It was a very filling sunday family
meal!

Glad you liked it, hummingbird! It's my DH's very favorite dinner. I'll have to make it for him soon.
