Tomatoes, Spinach & Chicken
1 medium tomato, chopped
1/2 lb. fresh spinach, cut up
1/2 lb. cooked chicken breast, cut into 2" cubes
Fresh Lemon & Dry Mustard Dressing
Chill tomaotes, spinach & chicken. Layer spinach on individual plates and cover with tomaotes. Top with chicken and serve with dressing.
To Make Dressing
1/4 cup fresh lemon juice
1/4 tsp. dry muistard
1/4 tsp. ground pepper
1 tsp. chopped fresh parsley
Combine all dressing ingredients & use right away.
