Chicken Taco Casserole
3 lb chicken
1 cup onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1-2 teas chili powder
garlic powder to taste
1 can whole tomatoes in juice (chop them)
1/2 package Doritos
1 cups grated cheddar cheese (optional)
Boil chicken until tender; cut into bite-sized pieces and place in casserole dish. Saute onion and add to chicken. Mix soup, seasonings and tomatoes. Add to casserole and stir thoroughly. Sprinkle with crumbled Doritos and top with cheese. Bake covered for 30 minutes at 375º. Uncover and bake until cheese browns slightly.
Ok, so I never follow a recipe. This is what I did :
I used (3) raw chicken breasts (bnls/skls) - placed them in casserole dish after spraying it with Pam. I sprinkled the garlic powder and chili powder on top of the chicken. Then I topped it with a few rings of onions. I mixed a can of pureed tomatoes with a can of cream of chicken and a can of cheese soup together and dumped it over the chicken then, the chips and cheese. I baked it a for 35 minutes.
It was good. Try it, let me know how it turns out.
